Wow, it's been awhile since I've updated my blog! So much has happened since Kevin deployed. I am currently back in school working on my Bachelor's degree in Radiologic Sciences. I graduate in April 2012. I'm hoping to direct commission in the AirForce, but will settle in the Army if I have to. In July 2011, I went with my unit to Fairbanks, Alaska, which was A-MAZING! We went river rafting, and got to visit Denali National Park. In August 2011, I joined a crossfit gym here in Colorado Springs, and I absolutely love everything about it. Thanks to Elisa! In November 2011, I flew with my unit to Vegas for the Veterans Day Parade and had a wonderful time. Kevin is now back from deployment and together we decided to live a healthier life style by going to crossfit (when we can) and eating healthier by eating paleo. My friend Jessica bought me a paleo book called Everyday Paleo. Below are some pictures of our paleo meals that were just delish!

This morning we cooked these egg cupcakes, which taste just like an omelet:


For lunch, we made Wild-Salmon Salad with a citrus salad dressing. This salad has so much flavor! Definitely making this again soon!










For our snack, we cut up some slices of avocado and snacked on some beef jerky.










For dinner tonight, we made Spice Rub Slow-Cooked Chicken. It smells so good!











Because I work graveyards, I had to plan ahead and make my meals ahead of time for the week so that I can make time for crossfit and arrive on time for work. Here are some meals we have already made for this week:

These are called "Bugs in a boat." It's a snack that consists of celery filled with almond butter, sprinkled with coconut flakes and raisins.











These are called Easy Steak Skewers. Very simple to make!

2011 Deployment

This weekend Kevin left for his first deployment to Afghanistan. This was the hardest day of my life. I miss him so much. Times like these make you wish that family lived closer and friends were always there in need. They say to keep busy and time will fly by. I sure hope that is right.

Kevin- I miss you & love you so much. Hurry back home!

New Year, New Me!



This year my husband and I decided to join a gym. Yes, I know we can go to the base for free, but the base only offers so much and is super crowded. So this new year we joined Villasport:



Working out has never been so much fun. Mostly because of how much this gym offers. Here's a tour...
As you can see here is an overview of the first floor which offers a selection of free & selective weight machines. There is also a cafe & a Starbucks. And for those of you who have children, Villasport offers free childcare with your membership.

I'm not much of a basketball player, but my husband loves to play. Villasport offers a NBA sized court ready for leagues, tournaments, & games.
Spin is more of my kind of workout. I can pretty much say that I'm addicted to it. The great thing about this gym is that they have a room for each activity such as aerobics, pilates, yoga, & of course spin, so there is no sharing of a room meaning there are double the classes!
No need to wait for a cardio machine since there are over 100 cardio machines to choose from all equipped with personal TV's.
And after a hard workout, you can stop by the spa for a nice relaxing massage or a pedi/mani. Totally worth it.
Can you guess what that picture to the right is? Yup, the locker room which includes a whirlpool, sauna, steam room, & showers.
And the greatest perk of this gym is the indoor & outdoor pools & waterpark, including a lazy river.
Some people may think I'm crazy for joining this gym, but I think it's definitely worth every penny. We literally eat, sleep, work, & workout. Who would have thought a workout would be so relaxing in a way? So my new year's resolution, like so many others, is to get my butt into shape. And of course that means I have to change my diet plan as well. So starting this week, my husband and I shopped at Whole Foods and are going to cook healthy meals. I'm going to update this blog to keep myself accountable. Last night we cooked chicken fajitas:
It was way too cold outside to grill these yummy fajitas, so the stove top was just going to have to work. My workout consisted of a 3 mile run, lower body & back workout, and I swam laps in the pool..which is very difficult. Swimming laps isn't as easy as it looks!
Tonight's meal consists of baked salmon, asparagus & a squeeze of lemon. Today is my rest day at the gym. =) Until next time!
